Wash and dry the tomatoes and mint leaves. Cut the tomatoes in half, remove the seeds and chop the tomatoes in small cubes. Roughly chop the mint leaves, but leave some to garnish the salsa. Chop the walnuts finely.
In a bowl, mix the tomatoes with mint, add the olive oil, lemon juice, salt and pepper to taste. Add the walnuts and mix well. Garnish with mint leaves and serve.

Storage: Keep the salsa in an airtight container in the fridge for up to 4 days.Not suitable for home freezing.
