Shrimp and Leeks Pasta

Ingredients
  

  • 7 oz linguine pasta or any other long pasta like spaghetti
  • 1 lb large shrimp peeled and deveined
  • 1 leek, only white and light green parts sliced
  • 1/4 cup white wine
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese plus extra for serving
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • lime or lemon zests optional, to taste

Instructions
 

  • Cook the linguine pasta according to the package directions. Drain and set aside. Reserve some of the cooking water.
  • In the same pot, heat the olive oil over medium-high heat. Add the sliced leeks and cook until tender and lightly browned, stirring occasionally.
  • Add the minced garlic to the pot and cook for 30 seconds.
  • Add the shrimp to the skillet and cook until they turn pink for about 3 minutes.
  • Add the heavy cream, parmesan and the cooked pasta to the skillet and toss everything together until the pasta is coated with the sauce. Add some pasta cooking water if the sauce is too thick.
  • Season with salt and pepper to taste.
  • Top with fresh lime or lemon zest and grated Parmesan cheese.

Notes

Reserve some of the cooking water to thin the sauce if needed.
You can customize this recipe by swapping out the shrimp for chicken or tofu, or by adding in your favorite veggies.
