Ingredients
  

  • 1 lb beef mince
  • 1 large onion diced
  • 3 garlic cloves minced
  • 1-2 bay leaves
  • 1 large carrot diced
  • 1 celery stalk diced
  • 1 red bell pepper diced
  • 1 can (14.5oz) diced or crushed tomatoes
  • 2 cups potatoes peeled and cubed
  • 1 teaspoon Italian seasoning
  • 2 cups beef broth chicken or vegetarian also works
  • 1 cup hot water as needed
  • salt and pepper to taste
  • 3/4 cup frozen peas optional
  • 2-3 tablespoons chopped fresh parsley
  • Pieces of bread optioanl

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and cook until browned on all sides. Remove the beef from the pot and set it aside.
  • Add the onions to the pot and cook until the onion is translucent for 2 minutes.
  • Add the carrots, celery and bell peppers to the pot and cook for 5 minutes, or until they begin to soften, followed by the garlic, cook until fragrant for a minute more.
  • Add the diced tomatoes, beef broth, water, Italian seasoning, salt, and pepper to the pot. Stir to combine.
  • Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes.
  • Add the peas to the pot. Stir to combine.
  • Simmer the soup for an additional 15 minutes, or until all the vegetables are tender and flavours have blended.
  • Remove the bay leaf and serve the soup hot, garnished with fresh parsley if desired.
