My favorite healthy and healthy raw salad is a cucumber and radish salad. This simple salad is easy to make and packed with flavor, making it the perfect addition to any menu.

Ingredients
  

  • 1 can (14oz) butter white beans washed, strained
  • 2 radishes thinly sliced
  • 1/2 cucumber cut into 1/2-inch cubes
  • 1/2 cup orange juice
  • 2 parsley brunches chopped
  • 1 tablespoon white wine vinegar
  • 1/2 tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions
 

  • Add the beans, cucumber and radishes to a serving bowl. Season with orange juice, vinegar, olive oil, salt and pepper to taste.
  • Garnish with parsley leaves and serve.
