Cucumber and Radish Salad
My favorite healthy and healthy raw salad is a cucumber and radish salad. This simple salad is easy to make and packed with flavor, making it the perfect addition to any menu.

- 1 can (14oz) butter white beans washed, strained
- 2 radishes thinly sliced
- 1/2 cucumber cut into 1/2-inch cubes
- 1/2 cup orange juice
- 2 parsley brunches chopped
- 1 tablespoon white wine vinegar
- 1/2 tablespoon extra virgin olive oil
- salt and pepper to taste
Add the beans, cucumber and radishes to a serving bowl. Season with orange juice, vinegar, olive oil, salt and pepper to taste.
Garnish with parsley leaves and serve.
