Quick Skillet Granola

This homemade granola is made in just one skillet and takes less than 15 minutes to prepare. Plus, you can customize it to your liking by adding your favorite nuts, seeds, and dried fruits.

Ingredients
  

  • 1 cup rolled oats
  • 1/3 cup mixed nuts of your choice preferably almonds, brazil’s nuts or walnuts
  • 1/4 cup cup pumpkin seeds
  • 1/3 cup pitted dates chopped
  • 1/3 cup dried fruits of your choice e.g. cranberries, apricot, banana, raisins, sultanas
  • 1/2 teaspoon cinnamon powder
  • 2 tablespoons vegetable oil
  • 1 teaspoon brown sugar or honey or maple syrup

Instructions
 

  • To a medium non-stick skillet, add all ingredients and toss to coat with a rubber spatula.
  • Bring the skillet at medium heat and cook for 6 minutes, stirring occasionally with spatula.
  • Transfer the granola to a tin to cool at ambient temperature. Serve with vegan yoghurt, ice cream, fruits.
  • Store in an airtight container for 1 month at the cupboard.

Notes

  • Keep an eye on the heat: The granola can burn quickly, so it's important to keep an eye on the heat and stir frequently. Medium heat is usually sufficient, but you may need to adjust depending on your stove.
  • Customize your mix-ins: The great thing about skillet granola is that you can customize it to your liking. Feel free to add in your favorite nuts, seeds, and dried fruit.
  • Let it cool before serving: The granola will crisp up as it cools, so it's important to let it cool for a few minutes before serving.
  • Store it properly: To keep the granola fresh, store it in an airtight container at room temperature for up to a week. You can also freeze it for longer storage.
