- 2 medium bananas ripe
- 6 tablespoons granola
Preheat the oven at 320ºF
Crumple the bananas with a fork and mix with granola into a small bowl.
Line a baking sheet with parchment paper and spoon half of the granola mixture shaping into two round biscuits.
Bake for 15 to 20 minutes, flip and bake for more 7-10 minutes. Remove from the oven, place into a cooling rack and serve at room temperature.
- Use a variety of textures: To make your granola cookies interesting and flavorful, use a variety of textures in your recipe. For example, you can add crunchy nuts, chewy dried fruits, and smooth chocolate chips. This will create a balance of flavors and textures in your cookies.
- Don't overmix the batter: When making granola cookies, it's important not to overmix the batter. Overmixing can result in tough, dense cookies. Mix the ingredients until just combined and then stop.
- Use a cookie scoop: Using a cookie scoop will ensure that your cookies are evenly sized, which is important for even baking. A cookie scoop will also make the process faster and less messy. Scoop the dough onto a baking sheet lined with parchment paper, leaving about 2 inches between each cookie.

To store granola cookies, keep them in an airtight container at room temperature for a few days or in the fridge if you live in a warm or humid climate.
You can also freeze them for longer-term storage by placing them in an airtight container or zip-top freezer bag for up to 3 months.
Be sure to separate them with layers of parchment paper or wax paper to prevent them from sticking together.
