Hearts Of Palm Spaghetti With Tomato

Ingredients
  

  • 1 1/2 cups palm hearts spaghetti
  • 1/2 cup cherry or grape tomatoes
  • 2 tablespoons walnuts chopped
  • 8 leaves basil
  • 2 tablespoons extra virgin olive oil
  • salt and pepper

Instructions
 

  • Wash the tomatoes and basil leaves. Cut the tomatoes in half and reserve.
  • Bring a small saucepan with salted water to boil. Add the palm hearts noodles and cook for 30 seconds. Remove the palm hearts with a sieve and reserve the cooking water.
  • Heat a skillet to medium heat. Add the olive oil and fry the tomatoes for 2 minutes, stirring occasionally. Be careful to not dismantle the tomatoes, as they are delicate.
  • Add the palm hearts to the skillet and cook for 2 minutes, stirring. Add 3 to 4 tablespoons of the cooking water and toss. Remove from the heat.
  • Add half of the basil leaves. Season with salt and pepper. Transfer to a plate and add the walnuts, the remaining basil and serve.

Notes

Keep in the fridge for up to 3 days. Not suitable for home freezing.
