Certainly an Italian grilled chicken sandwich is my best solution for quick fixes when you are in a hurry and need a nutritious healthy meal to eat.This sandwich is ready in just 15 minutes.
Season the chicken breast fillet with 1/2 tablespoon of lemon juice, 1 tablespoon of olive oil, salt, pepper. Leave in a medium pot with a lid to chill on the fridge for 15 minutes.
Rip the basil leaves by hand and place in a medium bowl. Add the 1/2 tablespoon of olive oil and the remaining lemon juice. Season with salt and pepper, add the mayonnaise and mix.
Bring a medium skillet over medium heat, add 1 tablespoon of olive oil and grill the chicken fillet for 4 minutes each side. Transfer to a chopping board and slice.
Add the bread slices to the same frying pan to golden both sides over medium heat.
To assemble the sandwich: spread the mayonnaise mixture on both bread slices, add the watercress and place the sliced chicken breast on top. Top with more watercress and close the sandwich with the other slice.
