Italian Grilled Chicken Sandwich

Certainly an Italian grilled chicken sandwich is my best solution for quick fixes when you are in a hurry and need a nutritious healthy meal to eat.

This sandwich is ready in just 15 minutes. 

I love making sandwiches when I’m not too hungry and just want something to eat and get on with my life. Which normally includes cooking recipes for this blog or other people, by the way! Haha

But a nice chicken sandwich NEEDS a good sauce or in this case, a seasoned mayo. Mine is super simple but effective: 

Basil, lemon and mayo.

Spread on a toasted wholemeal bread which I prefer, but other kinds of breads can be used here like:

Ciabatta, bagel, baguette, brioche, whatever fresh bread you have hanging on your kitchen works.

It’s definitely my type of gourmet grilled chicken!

Ingredients

  • 2 wholemeal thick bread slices
  • 1 chicken breast fillet
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 5 basil leaves
  • 2 tablespoon mayo
  • Watercress, to taste
  • Salt and pepper to taste

How to make Italian Grilled Chicken Sandwich

  1. Season the chicken breast fillet with 1/2 tablespoon of lemon juice, 1 tablespoon of olive oil, salt, pepper. Leave in a medium pot with a lid to chill on the fridge for 15 minutes.
  2. Rip the basil leaves by hand and place in a medium bowl. Add the 1/2 tablespoon of olive oil and the remaining lemon juice. Season with salt and pepper, add the mayonnaise and mix.
  3. Bring a medium skillet over medium heat, add 1 tablespoon of olive oil and grill the chicken fillet for 4 minutes each side. Transfer to a chopping board and slice.
  4. Add the bread slices to the same frying pan to golden both sides over medium heat.
  5. To assemble the sandwich: spread the mayonnaise mixture on both bread slices, add the watercress and place the sliced chicken breast on top. Top with more watercress and close the sandwich with the other slice.
  6. Enjoy!

Storage

Keep uncooked in the fridge for up to 1 day.

Not suitable for home freezing.

Variations

  • Vegan: Substitute chicken for tofu and use vegan mayonnaise.

How to make grilled chicken tender?

Chicken breast need some key techniques to not get dry and rubbery when cooking.

You need to marinade the fillets for some time before cooking. Ideally for a few hour is enough, but if you dont have time, just 15 minutes will also do a great work.

How to perfectly cook chicken breasts

Chicken breasts cannot be eaten raw or rare. That’s why its important to cook at medium heat so the internal temperature reaches 165º F. Also, don’t overcook the chicken as it will dry out, for a normal sized fillet, 4 to 6 minutes each side is enough.

What to serve with grilled chicken sandwich

You can make this recipe for a picnic during summer, for your kids lunch box, as a quick lunch or serve along with some delicious Russian Salad.
