Try these delicious Italian Pickled Onions with Thyme, a special recipe of mine that enhances the mediterranean flavours and aromas.
If you even been around any mediterranean cities in Italy or France you probably noticed how they love thyme, and I know that thyme goes perfectly with onions, that’s why I decided to learn how to pickle vegetables and this was my ultimate creation.
To my surprise the flavours married perfectly and I was shocked by how easy it is to pickle anything!
Did you know that pickles are an ancient way to conserve vegetables for a long time without the use of a refrigerator? That’s right!
About 4 thousand years ago the ancient Mesopotamians people use to soak cucumbers in acidic brine to preserve them for longer. Since then, the pickles grew with civilizations and traveled the world to all cultures, becoming a staple everywhere.
This old fashioned pickled onion recipe is vegan, gluten-free and low in calories, or keto friendly if you prefer. Absolutely stunning!

Ingredients list
- 2 cups of still water
- 1 cup of alcohol vinegar
- 4 tablespoons of sugar
- 3 teaspoons of salt
- 1/2 cup of olive oil
- 1 cup of red onions
- 3 brunches of fresh thyme
- 17oz (500 ml) sterilized glass jar with lid
How to make Italian Pickled Onions with Thyme
- Cut the onions in half and detach the petals, then cut each petal lengthwise in stripes.
- In a medium saucepan, add the water, vinegar, sugar, salt and the olive oil. Heat until starts to boil.
- Add the onions to the mixture in the pan and leave for exactly 30 seconds over medium heat.
- In a clean and dry jar, add the pickled onions first and place the fresh thyme brunches, topping up with the remaining solution and leave it to cool before closing the lid.
- Close the lid and place in the refrigerator before use.
Notes
How to sterilize jars for pickles: Wash with soapy water and rinse very well. Boil the jars and lids in a large pan for 5 minutes and allow it to dry completely.
Storage
Homemade pickled onions will last for up to 3 weeks in the fridge.
