The Italian no-churn semifreddo iced coffee is a brilliant creation that will pop in your mouth. A dessert to impress your guests.
The semifreddo in Italian means half-frozen. Originally it’s just whipped cream flavoured with the most exciting ingredients.
I decided to mix with coffee, peanut butter, honey and orange juice.
Is semifreddo just frozen mousse?
The semifreddo is a fully frozen whipped cream, like a frozen mousse. It’s basically air, sugar and flavourings mixed in whipped cream, giving a frozen, yet creamy texture.
What does semifreddo taste like?
The semifreddo is a classic Italian dessert. It melts in your mouth as the frozen whipped cream quickly dissolves in your mouth.
What is the difference between ice cream, gelato and semifreddo?
The semifreddo has a light texture, with a whipped cream based and frozen, to give a lighter feel, whereas ice cream and gelato have both denser textures, ate fatter and have more flavour complexity since it’s churned to give that characteristic creamy texture.

Ingredients list
- 1/3 cup no sugar peanut butter
- 2 tablespoons honey
- 1/2 cup orange juice
- 1/2 cup whipped cream
- unsalted ground nuts for garnish
- 1/2 cup brewed coffee
How to make Semifreddo Iced Coffee
- In a large mixing bowl, add the peanut butter, honey and orange juice. Mix with a spatula to turn in a creamy mixture. Reserve
- With the help of an electric mixer or whisk, whip the whipping cream for around 3 minutes.
- Take 1/3 portion of already whipped cream and mix well with the peanut butter mixture. Add the remaining whipping cream and gently incorporate with the remaining whipped cream.
- Transfer to individual cups or serving bowls and leave in the freezer for at least 1 hour.
- Brew 1 cup of coffee and leave in the fridge to cool.
- Remove the semifreddo from the freezer 10 minutes prior to serving, add 1 tablespoon of cold coffee to each dessert, top with nuts and serve right away.

Keep the semifreddo in the fridge for up to 3 months.
