I love watermelon so much that makes my mouth water just from talking about it. It’s my favourite fruit and whenever I manage to get a juicy and sweet watermelon, I buy it!
And what often happens is that I have this huge watermelon leftovers at home and don’t know what to do with it.
But watermelon vinaigrette salad is the salad I make and eat all the watermelon leftovers I have at home.
I learned this recipe from a Brazilian chef and once I tried, it changed my life cause i discovered a new flavour complexity I have never felt it.

Ingredients list
- 2 cups watermelon, cubed
- 1/2 red onions, chopped
- 1 lemon juice
- 1 lemon zests
- 1 1/2 tablespoon red wine vinegar
- 1 tablespoon olive oil
- Salt to taste
- Ice cubes
How to make Watermelon Vinaigrette Salad
- Place the onions with ice cubes and cover with water. Let the onions immersed for 10 minutes to reduce the bitterness.
- Drain the onions transfer to a serving bowl. Add the watermelon cubes, lemon juice and zests, vinegar and season with salt. Mix it gently and keep in the fridge until serving.
