- 1 1/2 cup of palm hearts spaghetti
- 1/2 cup of cherry or grape tomatoes
- 2 tablespoons of walnuts, chopped
- 8 leaves of basil
- 2 tablespoons of olive oil
- salt and pepper to taste
How to make Hearts of Palm Spaghetti With Tomato
- Wash the tomatoes and basil leaves. Cut the tomatoes in half and reserve.
- Bring a small saucepan with salted water to boil. Add the palm hearts noodles and cook for 30 seconds. Remove the palm hearts with a sieve and reserve the cooking water.
- Heat a skillet to medium heat. Add the olive oil and fry the tomatoes for 2 minutes, stirring occasionally. Be careful to not dismantle the tomatoes, as they are delicate.
- Add the palm hearts to the skillet and cook for 2 minutes, stirring. Add 3 to 4 tablespoons of the cooking water and toss. Remove from the heat.
- Add half of the basil leaves. Season with salt and pepper. Transfer to a plate and add the walnuts, the remaining basil and serve.

I will be on the lookout for the Heart of Palm spaghetti, but I just made the sauce with regular spaghetti and loved it. I wanted a more summery pasta dish and used my fresh cherry tomatoes for the sauce. The walnuts were what I enjoyed the most.
