Ingredients list

  • 1 cup rolled oats
  • 1/3 cup mixed nuts of your choice (preferably almonds, brazil’s nuts or walnuts)
  • 1/4 cup pumpkin seeds
  • 1/3 cup pitted dates, chopped
  • 1/3 cup dried fruits of your choice (e.g. cranberries, apricot, banana, raisings, sultanas)
  • 1/2 tsp cinnamon powder
  • 2 tbsp vegetable oil
  • 1 tbsp brown sugar, or honey or maple syrup

How to make a Quick Skillet Granola

  1. To a medium non-stick skillet, add all ingredients and toss to coat with a rubber spatula.
  2. Bring the skillet at medium heat and cook for 6 minutes, stirring occasionally with spatula. 
  3. Transfer the granola to a tin to cool at ambient temperature. Serve with vegan yoghurt, ice cream, fruits. 
  4. Store in an airtight container for 1 month at the cupboard.
